Heat Retention and Control
The El Dorado have some key features that make it great for heat retention. The fire box is made from 10 gauge steel and the inside of it is tiled with fire bricks to hold temperatures.
To add to that, there’s a three inch air gap between the steel in the fire box and a 12 gauge steel outer shell. This has two functions, it helps retain heat in the fire box, and it also keeps the outside of the grill cooler.
All that heat retention helps keep a fire going and makes it easier to maintain temperature. That’s what you want, especially if you’re if you have the cooking grate raised for slow cooking.
